Method
- 1

Chill two small glasses or cups in the freezer for at least 10 minutes so the gelato melts more slowly.
- 2

Place one generous scoop of vanilla gelato in each chilled glass.
- 3

Brew the espresso fresh so it is piping hot when it hits the gelato.
- 4

Pour one shot of hot espresso directly over each scoop right at the table.
- 5

Scatter over the hazelnuts and chocolate shavings if using, add a tiny pinch of flaky sea salt to sharpen the chocolate notes, tuck in an amaretti cookie, and serve immediately with a spoon.
